Monday weigh-in 207. No loss. I'm right where I was last week which is ok, because that means I didn't gain weight!

I didn't do any baking last week. I don't know what is wrong with me. That's my favorite thing to do! I did try a couple new dinner recipes, though. The first was Three Cheese Garlic Chicken Pasta from Heavenly Homemakers. It was pretty good, almost like chicken alfredo. The second one was Corn Dog Muffins. I got the idea from Heavenly Homemakers, but used a different recipe. For the corn muffin, I used  Gina's crusty cornbread recipe I increase the sugar to 1/2 cup because we like sweet cornbread. Then I put cut up hot dogs in the batter and baked the muffins for 25 minutes.

Another loss!

Monday weigh-in 207 lbs. That's another loss!

I'm pretty happy about that loss. I made a peanut butter sheet cake with peanut butter frosting last week, and since my hubby doesn't like peanut butter like I do, I ate A LOT of it. I ended up tossing about half of it so I wouldn't eat it! If you want to try the peanut butter cake go here for the recipe.

I was getting ready to make some apple pie this past weekend and realized my pie pans are missing. My smaller 8 inch and 9 inch square pans have also vanished. So, instead of making pie like I'd planned I made some cinnamon applesauce. It's pretty good and I think we might eat it with dinner tonight.

Missy's Applesauce

8-12 apples peeled and cored (I used Honeycrisp and Macintosh)
1/4 - 1/2 Cup sugar
3/4 tsp cinnamon
1/2  Cup water

Put apples, cinnamon, and water into a pot and cook on medium until soft. Use a potato masher to smash the apples. You'll need to taste it so you can decide how much sugar to use. Please be careful because it is super hot! Add the sugar. I cool it slightly before putting in a container and storing in the refrigerator.

Enjoy your apples and peanut butter like I did.

Busy weekend!

I quit 30 Day Shred. Whoa! Hang on there, buddy! It's just until tomorrow, I hope. I had to figure out how I can do it during the day instead of in the evening. There are just too many things going on in the evenings. The kids have homework, baths or showers, and dinner. Sometimes Jon comes home a little later than usual. It just didn't work.

Ok, so on to the busy weekend. Friday, Jon and I brought the kids to a Halloween party that was put on by his employer. They had a blast. The kids each got to pick a pumpkin, I mean actually go into a pumpkin patch and pick it! There was trick-or-treating and a candy hunt. There were pony rides and hay rides. It was almost like a little zoo. There were donkeys, mules, horses, a few kinds of cows and bulls, turkeys, ducks, chickens and pigs.

Saturday was filled with cleaning. I had so many dishes to wash. I had been neglecting them to Shred. Don't you love when the kids help clean up and end up tossing garbage all over the kitchen floor? I don't. You wouldn't believe what my kitchen floor looked like. The bathroom closet was filled with laundry, and a potty training Nickolas makes for some stinky undies. Gag gag.

Sunday I made another batch of potato soup. Huge batch. I have an ice cream bucket full in the freezer. Wait for the recipe. It's coming up later. Sunday evening I went with my sister and mom to my cousins baby/diaper shower. It was nice to be able to visit with family I don't often get to visit. Hey, and aren't pregnant women just beautiful?

Today I'm working on a chocolate cake. It, oddly, seems to be the most difficult cake for me to make. I've gone on to making up my own recipe for it. I also put a load of laundry in to help out the hubs, because that's his job and I messed it up yesterday. Oops. Dinner? Pizza dip or Sheppard's pie cups. I'll post the recipe sometime this week if we like it.

Here it is, the recipe you've all been waiting for:

Missy's Tater Soup

8 Cups Potatoes in about 3/4 in cubes
1 lb bacon cooked, chopped
1 lb kielbasa cut into chunks and cooked (I cut the rounds into quarters)
1 cup onion chopped finely
1 cup carrots sliced
5 cups milk (I use whole milk)
5 cups water
1 cup heavy whipping cream
1 cup sour cream
1/4 cup chicken soup base
1/2 cup butter
1/2 cup flour
salt and pepper
shredded cheddar cheese (garnish)


1. Peel and cut potatoes, chop onion, peel and slice carrots, cut bacon into 1/2 inch pieces and cut keilbasa into chunks.

2. Cook kielbasa until brown, not burnt. Drain and set aside.

3. Cook bacon until crispy. Drain bacon and reserve 1 tablespoon bacon grease.

4. Boil potatoes until almost cooked through.

5. Saute onions in the bacon grease. Sprinkle with salt and pepper. I let them cook until they start turning a golden color on the edges.Set aside. (I add them to my kielbasa bowl.)

6. After the bacon has cooled chop it up a little more.

7. In a large pot, melt the butter and add the flour. Stir together and let it get bubbly. Quickly stir in the milk. Add the water and chicken soup base.

8. Stir some of the hot liquid into the sour cream. Add the heavy cream and sour cream mixture back into the large pot.

9. Add the kielbasa, bacon, onion, carrots and potatoes into the large pot. Cook over low heat until potatoes and carrots are cooked through.

Now I've skipped 2 days, oops

According to My Fitness Pal (MFP) cooking for 90 minutes burns 284 calories. I don't think I'm going to be adding cooking as a cardiovascular activity again. I don't feel as though I'm doing anything to actively lose weight while I'm cooking. So, today it's back to 30 Day Shred!

No baking yesterday. I was too busy cooking a yummy potato soup. Mmmm!

Chocolate cupcakes and skipping a workout

I skipped day 4 of 30 Day Shred. I think that means I should walk to pick up Jonthomas today, right? Maybe the walk will tire out the kids enough so that they go to bed without a fight tonight?!

So, while I was skipping my workout yesterday, I tried baking my second round of chocolate cupcakes. I was really excited that these ones looked as though they turned out! However, they didn't taste very good. Did you have to make chocolate cake (wacky cake) in Home Ec class? That's what they tasted like. Ugh. Gross.

My legs are killing me!

I started Jillian Micheal's "30 Day Shred" a couple days ago. This is the second time I've started it. I can only imagine what pain my body will feel tomorrow. I can barely walk down the basement stairs without whining. It's all for good, though, right? So, here's my Monday weigh-in. Ready? 208.8!!!

Who wants to talk about baking? Ugh. Not me. Total failure this weekend. Twice. I'm trying to figure out how to make apple cupcakes. I tried two recipes. One was really bad the other not quite so bad. Recipe 1 turned out like cookie dough. I mean it was that stiff. I have no idea how a cupcake would have come out of that, so I doctored the recipe just a bit so that it was more cake-like. It didn't taste bad, just sunk. Recipe 2 sunk also, but definitely not as bad as recipe 1. Back to the drawing board on the apple cupcake.
